Moong Daal/Lentil Soup - Vegetable Soup


Moong Daal Soup


1 1/2 Cup Yellow Moong Daal/Lentils ( washed )

4 -5 cups water

Salt - according to your taste

2 teaspoons pure Turmeric Powder

1 teaspoon ginger paste

5-6 cloves of fresh Garlic

1 medium Onion (thinly sliced/chopped)

2-3 table spoons Cold Pressed Extra Virgin Olive oil 
(any cooking oil, I prefer Canola or Olive)

Few Green Chillies


Wash the Moong Daal Well.

In a saucepan, place the Moong Daal and Water under high heat and bring to a boil.
Then reduce heat to medium-low and cover. 
Let the daal cook well.
You can add the salt now too or later. It does not matter.

When the daal looks well cooked and the water has reduced by 2 1/2 cups. Add salt, turmeric powder and ginger paste and let cook. If lt looks too dry add more water to your liking. 

(Some like thick some like thin)

I like it in between!

While the daal mixture is cooking on low heat. 

Take a fry pan and heat the oil. 

Add onions and saute fry under medium high heat. Do not let the onions turn black! Keep stirring. Add some salt. When the onions become slightly caramel colored, add the crushed garlic cloves.

Add slightly halved green chillies and saute together

When onions become deep brown and the aroma of garlic is in the air.
It's ready to be added to the Daal mixture.

Add all to the daal mixture, stir well, cover and cook for 5 minutes in low-medium heat.

And Garnish with chillies, red crushed pepper before serving


This dish is my ultimate favorite when I go Carb Free Dieting.

I had this dish almost every other day during my Carb Free Eating Plan and 

have successfully lost 30 pounds of Baby Weight along with exercising :)

So, if you are on a Carb Free healthy eating Diet Plan this is an excellent dish to

 keep you filled with excellent source of Protein and if you like Desi food you 

can still have it!

Just not the rice and roti I guess :) But it's okay if you want a Chapatti that is 

Whole Wheat to go along with this Daal and exercise !
